Toffee Apples recipe


  • 9 small red apples
  • 9 wooden skewers
  • 450g caster sugar
  • 150ml water
  • 30g butter
  • 1 tbsp. liquid glucose (readily available in the bakery section in all good supermarkets)

Method of Preparation:

  1. Wash and dry the apples thoroughly and then impale them on the skewers.

  2. Get together a bowl that is large enough to fit a saucepan in and then fill it with boiling water.

  3. Place the sugar and the water together in a saucepan and heat gently until the sugar dissolves into the water.

  4. Add the butter and the glucose at this stage and turn the heat up. Cook the mixture rapidly, without stirring it, until it reaches a temperature of 150C on a thermometer or until it reaches the hard crack stage.

  5. Remove the saucepan from the heat and stand it in the bowl of hot water. This will stop the toffee from setting and will enable you to fully coat the apples.

  6. Dip each apple into the toffee until it is fully covered. Stand them apple side down on some greaseproof paper and leave them to cool and set completely.

Once these apples are set, you could wrap them in some cellophane and tie them with some ribbon to give them away as presents. This recipe makes nine toffee apples.
